Why Use a Drip Pan in a Kamado?
Ceramic heat deflectors absorb grease and moisture over time. During longer cooks, trapped drippings can burn, create unpleasant odors, and slowly stress the ceramic. Placing an 18″ stainless drip pan above the deflector catches grease before it ever reaches the ceramic surface.

XL Big Green Egg & Adjustable Rig Setups
The CGS XL Adjustable Rig gives XL Big Green Egg owners unparalleled flexibility for positioning the 18″ drip pan. The Adjustable Rig naturally creates an advantageous air gap between the deflector and the pan. You can use Crossbars to elevate the pan higher or lower depending on your cook setup.
This is one of the definitive advantages of the Adjustable Rig over fixed-position OEM rack systems—allowing you to create maximum separation between the hot ceramic and your drip pan to keep drippings from scorching.

Kamado Joe Big Joe Spacing Options
Utilize the multiple tiers of the Divide & Conquer System to properly space your half-moon deflectors and the 18″ drip pan. Our cooking preference is to create as much vertical space as possible between the deflectors and the pan to minimize burnt grease.

Why the Tapered Side & 1″ Depth Matters
This pan features a 1″ tapered sidewall. The narrower base sits perfectly inside your deflector footprint, while the wider upper rim expands outward to catch grease where it’s most likely to fall from large cuts of meat like full briskets, pork shoulders, or racks of ribs. Because we do not recommend adding liquid during a kamado cook, a taller 2″ or 3″ sidewall is unnecessary and can interfere with stabilizing grill temperatures.
How to Use & Clean
- Double-Line with Foil: Overlap two sheets of heavy-duty foil in a “+” pattern before the cook. It makes cleanup a 5-second job.
- Extend Coverage: You can flare the foil slightly over the rolled rim to catch wide drippings without blocking edge airflow.
- Expect Tarnish: It is 100% normal for stainless steel to smoke- and heat-tarnish inside a kamado. This doesn’t affect performance. Designate this pan as your dedicated BBQ grill pan.
- Dishwasher: If you choose to skip foil, the dishwasher will not remove the hardened baked-on grease.
Should You Use Ceramic Spacers?
Whenever vertical clearance allows, we highly recommend using CGS Ceramic Spacers to create an air gap between your hot deflector stone and the drip pan. This drop in direct heat transfer minimizes your drippings from burning and producing odors.
With the CGS 2″ ceramic spacers, you have two options on how to place them: fully upright for 2″, or on their side for 1-1/2″. Both setups below use the 1-1/2″ side spacing.

The CGS Engineering Philosophy
A quick note on material choice: There is no practical reason to pay premium prices for 304-grade stainless steel on a drip pan. Because the pan will inevitably tarnish from smoke and heat, a higher grade of stainless offers zero performance benefit. This is a durable, utility part designed to save you money without compromising your cook.
