Why Use a Drip Pan in a Kamado

Ceramic heat deflectors absorb grease and moisture over time. During longer cooks, trapped drippings can burn, create unpleasant odors, and slowly stress the ceramic.

Placing a 10″ stainless drip pan above the deflector helps catch grease before it reaches the ceramic.

How to Use

  • Double-line with foil — overlap two sheets in a “+” pattern for quick cleanup
  • Extend coverage — flare foil outward over the rim if needed
  • Reusable — proper foiling helps extend the life of the pan
  • Placement — set directly on the deflector or elevate using CGS Ceramic Spacers if clearance allows

Pro Tip: Using heavy-duty foil and a double layer makes cleanup easier and helps prevent grease from reaching the stainless pan.

How About Spacers?

CGS Ceramic Spacers can create an air gap between the deflector and drip pan. Unfortunately, most small kamados do not have enough vertical clearance to use spacers.

Check your rack system on our site and follow the recommended setup.

If using another kamado setup, follow the sizing steps above and include spacer height when calculating clearance.

Should You Add Liquid to the Drip Pan?

At CGS, we generally recommend not adding liquid during most BBQ cooks.

Kamado grills retain heat and moisture extremely well. Adding liquid increases humidity inside the grill and can reduce bark formation on meats.

What About Pans with Built-In Feet?

Candidly, we are not fans of these pans. In theory, they sound ideal. In reality, the built-in feet are too short and do not create enough space to effectively limit radiant heat coming off the top side of the deflector.

So, the pan collects the drippings, only to have them burn in the pan. Ideally, the more air space you can create between the pan and deflector, the less likely the drippings are to burn.

Remember, burnt drippings can create off odors and make it harder to clean the pan. Plus, some folks want to save the drippings to use in other cooks.

Best Way to Clean a Reusable Drip Pan

The most proactive thing you can do is double-foil the pan before using it. Go with a double layer because even heavy-duty foil can develop small tears or cracks as you press it into the pan. On long cooks, those small openings can slowly leak grease into the pan.

If you skip the foil, do not expect your dishwasher to get the pan fully clean, especially if you have burnt-on drippings. That burnt-on buildup is a tall ask for any dishwasher.

The pan will heat- and smoke-tarnish. That is simply a byproduct of using it in a kamado. You may be able to wash off some film buildup, but over time the pan will remain tarnished.

The best practice is simple: double-foil the pan before cooking and hand wash the pan after each use. Designate it as your kamado pan. We have followed these simple practices and used the same pan for years.

Can this pan be used with other kamado grills?

Yes. Any kamado grill using a 10″ round heat deflector can typically use a 10″ drip pan. Just check to make sure there is enough room under the cooking grid.

Should liquid be added to the drip pan?

Usually not. Kamado grills retain moisture naturally, and adding liquid can reduce bark formation during BBQ cooks.

My pan turned dark after cooking. Is that normal?

Yes. Stainless drip pans will heat-tarnish over time. The discoloration does not affect performance and simply shows the pan has been used for many good cooks.

Final Thought on the Drip Pan

There’s no need to spend extra on 304 stainless. Drip pans naturally darken with heat and smoke, so higher-grade stainless provides little practical benefit.
